Zesty Lemon Pepper Wings
Ingredients:
2 lbs chicken wings
2 Tablespoons baking powder
1 Tablespoon plus another separate teaspoon of salt
2 lemons, zested
2 tbsp olive oil
1 tsp cayenne pepper
1 tsp crushed red pepper flakes
1 tsp cracked black pepper
1 teaspoon garlic powder
1 tsp garlic powder
1 teaspoon smoked paprika
1 Tablespoon fresh chopped Thyme
1 Tablespoon fresh chopped Chives
1/4 cup Parmigiano Reggiano
3 Tablespoons melted butter
Instructions:
Pat the chicken wings dry with paper towels. Season the wings with the one tablespoon of salt. Place them on a wire rack in a pan or dish and place them in the refrigerator uncovered overnight to allow for drying.
In a large bowl, add the baking powder, the 1 teaspoon of salt, garlic powder, smoked paprika, and the zest of one lemon and mix well.
Toss the wings in the baking powder mixture coating well.
Preheat your oven to 425°F. Line a baking sheet with aluminum foil and place a wire roasting rack in the pan. Spray the wire rack with a pan release spray such as Pam.
Arrange the wings with the skin side up in a single layer on the rack in the prepared baking sheet.
Bake in the preheated oven for 1 hour, flipping halfway through, until the wings are crispy and fully cooked.
Place the wings in a large bowl and add the melted butter. Toss the wings in the butte.
To the bowl, add the lemon zest from the second lemon, chives, thyme, Parmigiano Reggiano, cayenne pepper, crushed red pepper flakes, and cracked black pepper.
Toss to coat them evenly with the spice mixture.
Serve immediately.
