French Dip Sandwich
Ingredients:
For the Beef:
2 lbs. beef ribeye
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
1 tsp fresh thyme, chopped
For the Au Jus (Dipping Sauce):
2 cups beef broth (low sodium)
1 tbsp Worcestershire sauce
1 small onion, thinly sliced
2 cloves garlic, minced
1 sprig fresh rosemary
1 tbsp butter
Salt and pepper to taste
For the Sandwiches:
4 French baguette rolls, split
12 slices Swiss cheese
Instructions:
1. Cook the Beef:
Season the beef with salt and place uncovered in the refrigerator over night.
Preheat oven to 275°F (135°C).
Rub beef with pepper, garlic powder, onion powder and thyme.
Place in a roasting pan and cook until an internal temperature of 120 degrees internal temperature is reached.
Allow beef to come to room temperature.
Place the beef in the refrigerator and allow it to chill.
Once the beef has chilled, slice it thinly.
2. Make the Au Jus:
In a pan over medium heat, melt butter and sauté onions and garlic until soft.
Add beef broth, Worcestershire sauce, and fresh rosemary.
Simmer for 45 minutes.
Taste and season with salt and pepper.
Strain to remove solids. Keep warm.
3. Assemble the Sandwiches:
Preheat the oven to 375 degrees.
Slice the bread open.
Lay the cheese on the top bun and toast the bread in the oven until it begins to crisp and the begins to melt.
4. Serve & Pair with Wine:
Serve hot with au jus for dipping.
