1 teaspoon sugar
1 teaspoon rice vinegar
1 teaspoon chili oil
1/2 teaspoon sesame oil
1 clove garlic, minced
1 teaspoon finely chopped chives
1 teaspoon sesame seeds
For Frying:
Vegetable oil for deep frying
Instructions
1. Prepare the Wonton Filling:
In a large bowl, combine the ground pork, chopped shrimp, green onions, soy sauce, wine, sesame oil, cornstarch, and white pepper. Mix until thoroughly combined.
2. Assemble the Wontons:
Place a wonton wrapper on a clean, flat surface.
Spoon about 1 teaspoon of the filling into the center of the wrapper.
Moisten the edges of the wrapper with a little water. Fold the wrapper in half to form a triangle, pressing the edges to seal tightly. Optionally, fold the two bottom corners together to create a traditional wonton shape.
Repeat with the remaining wrappers and filling.
3. Fry the Wontons:
Heat about 2 inches of vegetable oil in a deep frying pan or pot to 325°F .
Fry the wontons in batches, being careful not to overcrowd the pan, for 3-4 minutes, or until golden brown and crispy.
Remove the wontons with a slotted spoon and drain on paper towels.
4. Prepare the Soy Dipping Sauce:
Mix the hot water and the sugar until sugar is dissolved.
In a small bowl, whisk together Tamari, rice vinegar, chili oil, garlic, sesame seeds, sesame oil, minced garlic, chives and sugar mixture until mixed combined.
5. Serve:
Serve the crispy wontons warm with the soy dipping sauce on the side.
