Ingredients

For the Wonton Filling:

  • 1/2 pound (225g) ground pork

  • 1/2 pound (225g) raw shrimp, peeled, deveined, and finely chopped

  • 2 green onions, finely chopped

  • 1 tablespoon soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon minced garlic

  • 1 teaspoon minced ginger

  • 1 teaspoon cornstarch

  • 1/2 teaspoon white pepper

  • 1/2 teaspoon sugar

  • 1 package wonton wrappers

For the Soy Dipping Sauce:

  • 3 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon sugar

  • 1 clove garlic, minced

  • 1 teaspoon finely chopped green onion or sesame seeds for garnish

For Frying:

  • Vegetable oil for deep frying

Instructions

1. Prepare the Wonton Filling:

  1. In a large bowl, combine the ground pork, chopped shrimp, green onions, soy sauce, oyster sauce, sesame oil, garlic, ginger, cornstarch, white pepper, and sugar. Mix until thoroughly combined.

2. Assemble the Wontons:

  1. Place a wonton wrapper on a clean, flat surface.

  2. Spoon about 1 teaspoon of the filling into the center of the wrapper.

  3. Moisten the edges of the wrapper with a little water. Fold the wrapper in half to form a triangle, pressing the edges to seal tightly. Optionally, fold the two bottom corners together to create a traditional wonton shape.

  4. Repeat with the remaining wrappers and filling.

3. Fry the Wontons:

  1. Heat about 2 inches of vegetable oil in a deep frying pan or pot to 350°F (175°C).

  2. Fry the wontons in batches, being careful not to overcrowd the pan, for 3-4 minutes, or until golden brown and crispy.

  3. Remove the wontons with a slotted spoon and drain on paper towels.

4. Prepare the Soy Dipping Sauce:

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and minced garlic until sugar dissolves.

  2. Garnish with green onion or sesame seeds if desired.

5. Serve:

Serve the crispy wontons warm with the soy dipping sauce on the side.
