Classic Green Bean Casserole
Ingredients
For the Green Beans:
2 lbs fresh green beans, trimmed and cut in half
Salt for blanching
For the Mushroom Sauce:
3 tbsp unsalted butter
1 lb cremini or baby bella mushrooms, chopped
3 cloves garlic, minced
3 tbsp all-purpose flour
1 1/2 cups chicken
1 1/2 cup heavy cream
Salt and black pepper to taste
For the Topping:
1 1/2 cups French’s French Fried Onions
2 slices white bread
1 tablespoon unsalted butter, room temperature
salt and pepper
Instructions
1. Prepare the Green Beans:
Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and tender-crisp. Transfer to an ice bath to stop cooking, then drain and set aside. Dry well.
2. Make the Topping:
1. Tear the bread into pieces and to a food processor. Add the room temperature butter and season with salt and pepper. Pulse until combined and crumb consistency. Place in medium bowl and mix with in the fried onions with your hand.
2. Make the Mushroom Sauce:
Heat butter in a large skillet over medium heat. Add the garlic and mushrooms, cooking until softened and browned, about6-8 minutes.
Sprinkle in the flour and stir for another 1 minute to cook off the raw taste.
Slowly whisk in the chicken stock and cream, stirring constantly until smooth.
Add salt, and pepper. Simmer for 10-12 minutes until the sauce thickens. Remove from heat.
3. Assemble the Casserole:
Preheat your oven to 425°F .
In a large mixing bowl, combine the blanched green beans with the mushroom sauce until evenly coated.
Transfer the mixture to a greased 9x13-inch baking dish.
4. Bake and Add Topping:
Bake for 15 minutes until the casserole is bubbly and the edges are slightly golden.
Remove from the oven, evenly spread French's French Fried Onions over the top, and return to the oven for 5 minutes until the onions are golden brown.
