Watermelon & Feta Salad
Ingredients:
4 cups watermelon, cubed
1 cup feta cheese, crumbled
1/2 cup fresh mint leaves, chopped
1/2 cup fresh basil leaves, chopped
2 tbsp olive oil
2 tbsp lime juice
1 tbsp honey
Salt and black pepper to taste
Instructions:
Prepare the Ingredients:
In a large bowl, combine the cubed watermelon and crumbled feta cheese.
Make the Dressing:
In a small bowl or jar, whisk together the olive oil, lime juice, and honey until well combined. Season with salt and black pepper to taste.
Assemble the Salad:
Pour the dressing over the watermelon and feta mixture.
Gently toss to combine, ensuring the watermelon and feta are evenly coated with the dressing.
Add Fresh Herbs:
Sprinkle the chopped mint and basil over the top of the salad.
Give the salad a final gentle toss to mix in the herbs.
Serve:
Transfer the salad to a serving dish or individual bowls.
Serve immediately, or chill in the refrigerator for about 30 minutes before serving for a cooler, refreshing dish.
