Miso Glazed Salmon
Ingredients:
4 salmon fillets (about 6 ounces each, your choice of skin on or skin off)
1/2 cup white miso paste
3 tablespoons mirin
3 tablespoons sake
1/4 cup sugar
Instructions:
Prepare the Miso Glaze:
In a medium bowl, combine the white miso paste, mirin, sake, and sugar.
Mix thoroughly until the sugar is completely dissolved and the mixture is smooth.
Marinate the Salmon:
Place the glaze in a shallow rimmed dish.
Place the salmon fillets in the shallow dish with the glaze, skin side up if using skin on. Be sure not to get the glaze on the skin side.
If you're using skin off salmon, place over the salmon in the shallow dish with the glaze, ensuring each fillet is evenly coated.
Cover or seal and refrigerate for 24 hours for a deep, rich flavor.
Preheat the Broiler:
Set your oven's broiler to low and place a rack about 8 inches from the heat source. Prepare a baking sheet by lining it with aluminum foil for easy cleanup and lightly greasing it to prevent sticking.
Broil the Salmon:
Remove the salmon from the marinade, carefully removing the excess glaze with your finger. Place the salmon fillets on the prepared baking sheet, skin-side down.
Broil the salmon for 6-10 minutes, depending on the thickness of the fillets and your desired doneness. The top should be slightly charred and the salmon just cooked through.
Serve:
Carefully remove the salmon from the oven and let it rest for a few minutes.
Serve the miso-glazed salmon hot, with steamed rice, vegetables, or your favorite sides.
