Ingredients:

  • 4 salmon fillets (about 6 ounces each, your choice of skin on or skin off)

  • 1/2 cup white miso paste

  • 3 tablespoons mirin

  • 3 tablespoons sake

  • 1/4 cup sugar

Instructions:

  1. Prepare the Miso Glaze:

    • In a medium bowl, combine the white miso paste, mirin, sake, and sugar.

    • Mix thoroughly until the sugar is completely dissolved and the mixture is smooth.

  2. Marinate the Salmon:

    • Place the glaze in a shallow rimmed dish.

    • Place the salmon fillets in the shallow dish with the glaze, skin side up if using skin on. Be sure not to get the glaze on the skin side.

    • If you're using skin off salmon, place over the salmon in the shallow dish with the glaze, ensuring each fillet is evenly coated.

    • Cover or seal and refrigerate for 24 hours for a deep, rich flavor.

  3. Preheat the Broiler:

    • Set your oven's broiler to low and place a rack about 8 inches from the heat source. Prepare a baking sheet by lining it with aluminum foil for easy cleanup and lightly greasing it to prevent sticking.

  4. Broil the Salmon:

    • Remove the salmon from the marinade, carefully removing the excess glaze with your finger. Place the salmon fillets on the prepared baking sheet, skin-side down.

    • Broil the salmon for 6-10 minutes, depending on the thickness of the fillets and your desired doneness. The top should be slightly charred and the salmon just cooked through.

  5. Serve:

    • Carefully remove the salmon from the oven and let it rest for a few minutes.

    • Serve the miso-glazed salmon hot, with steamed rice, vegetables, or your favorite sides.
