Home-Ground Bleu Cheese Burger with Garlic Aioli

Ingredients

For the Burger:

- 1.5 lbs beef flap meat (aka sirloin tips) cut into 1-inch cubes

-4 tablespoons unsalted butter

- 1 teaspoon salt

- 1/2 teaspoon freshly ground black pepper

- 4 slices bacon, cooked crisp

- 4 crumbled bleu cheese

- 4 brioche buns, toasted

- shredded iceberg lettuce

- Tomato slices

- Sweet onion slices

For the Garlic Aioli:

- 1 head of roasted garlic

- 2 egg yolks

- 1 garlic clove, minced

- 2 tablespoons fresh lemon juice

- 1/4 cup water

- Salt and to taste

- 1 3/4 cups extra virgin olive oil

Instructions:

For the Garlic Aioli:

1. Squeeze the cooled garlic cloves into a food processor. Add the egg yolks, fresh garlic, lemon juice, and water to the food processor. Blend until smooth. With the motor running on low speed, slowly drizzle in the Olive oil. Season with salt and cayenne pepper. Cover and refrigerate until needed.

For the Home-Ground Beef:

1. Freeze the beef cubes and the butter for about 30 minutes to firm them up for grinding.

2. Use a food processor to grind the beef chunks along with the butter.

3. Season the ground beef with salt and pepper, then gently form it into 4 burger patties.

Cook the Burgers:

1. Preheat the grill to medium-high heat.

2. Grill the burger patties for about 4-5 minutes per side, or until they reach your desired level of doneness.

3. A minute before the burgers are done, add crumbled bleu cheese on top of each patty to melt slightly.

Assemble the Burger:

1. Spread a generous amount of garlic aioli on the bottom half of each toasted brioche bun.

2. Place the lettuce on the bottom bun, followed by the bleu cheese burger patty, the bacon, tomato, and onion.

3. Spread more garlic aioli on the top bun and place on top. Serve immediately.
