Grilled Lamb Chops with Tzatziki Sauce
Ingredients:
For the Lamb Chops:
8 lamb chops (about 1 inch thick)
2 tablespoons olive oil
1 1/2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
For the Tzatziki Sauce:
1 cup Greek yogurt (full-fat preferred)
1 small cucumber, grated and squeezed of excess water
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
1 tablespoon fresh mint, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Prepare the Lamb Chops:
Preheat your grill to medium-high heat.
Pat the lamb chops dry with paper towels and rub both sides with olive oil.
In a small bowl, mix together salt, black pepper, and garlic powder. Season both sides of the lamb chops evenly with the spice mixture.
Make the Tzatziki Sauce:
In a medium bowl, combine the Greek yogurt, grated cucumber (make sure to squeeze out as much moisture as possible), minced garlic, lemon juice, olive oil, and fresh dill and fresh mint.
Season with salt and pepper to taste, and mix everything together until well combined.
Refrigerate the tzatziki until ready to serve.
Grill the Lamb Chops:
Place the lamb chops on the preheated grill.
Grill for about 4-5 minutes per side, depending on the thickness of the chops and your preferred doneness (for medium-rare, cook to an internal temperature of 135°F).
Remove from the grill and let the lamb chops rest for 5 minutes before serving.
Serve:
Serve the grilled lamb chops hot, with a generous dollop of tzatziki sauce on the side.
Optionally, garnish with extra fresh dill or lemon wedges.
