Grilled Lamb Chops with Tzatziki Sauce

Ingredients:

For the Lamb Chops:

  • 8 lamb chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 1 1/2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

For the Tzatziki Sauce:

  • 1 cup Greek yogurt (full-fat preferred)

  • 1 small cucumber, grated and squeezed of excess water

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon fresh mint, chopped

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions:

  1. Prepare the Lamb Chops:

    • Preheat your grill to medium-high heat.

    • Pat the lamb chops dry with paper towels and rub both sides with olive oil.

    • In a small bowl, mix together salt, black pepper, and garlic powder. Season both sides of the lamb chops evenly with the spice mixture.

  2. Make the Tzatziki Sauce:

    • In a medium bowl, combine the Greek yogurt, grated cucumber (make sure to squeeze out as much moisture as possible), minced garlic, lemon juice, olive oil, and fresh dill and fresh mint.

    • Season with salt and pepper to taste, and mix everything together until well combined.

    • Refrigerate the tzatziki until ready to serve.

  3. Grill the Lamb Chops:

    • Place the lamb chops on the preheated grill.

    • Grill for about 4-5 minutes per side, depending on the thickness of the chops and your preferred doneness (for medium-rare, cook to an internal temperature of 135°F).

    • Remove from the grill and let the lamb chops rest for 5 minutes before serving.

  4. Serve:

    • Serve the grilled lamb chops hot, with a generous dollop of tzatziki sauce on the side.

    • Optionally, garnish with extra fresh dill or lemon wedges.
