Chinese Barbecued Spareribs

Chinese Barbecue Pork Spareribs with Garlic and Ginger

Ingredients:

For the Marinade:

  • 1 1/4 ounces hoisin sauce

  • 2.5 ounces soy sauce

  • 1 1/4 ounces honey

  • 1 1/4 ounces Chinese rice wine (or Mirin)

  • 1 tablespoon crushed red pepper flakes, bloomed in warm water for 15 minutes

  • 4 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 2 tablespoons brown sugar

  • 1 tablespoon red food coloring (optional, for traditional appearance)

For the Ribs:

  • 2 racks pork baby back ribs or St. Louis cut ribs, about 4-5 pounds total (cut into individual ribs)

  • Plum sauce

Instructions:

  1. Prepare the Marinade:

    • In a large mixing bowl, combine hoisin sauce, soy sauce, honey, Chinese rice wine, red pepper flakes with liquid, minced garlic, minced ginger, brown sugar, and red food coloring. Mix well to combine all the ingredients thoroughly.

  2. Marinate the Ribs:

    • Place the spareribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well-coated.

    • Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to infuse the meat.

  3. Prepare for Baking:

    • Preheat your oven to 375°F.

    • Line a baking sheet with aluminum foil and place a wire rack on top. Remove the ribs from the marinade, allowing excess marinade to drip off, and place them on the wire rack.

    • Cover the pan tightly with aluminum foil.

  4. Bake the Ribs:

    • Transfer the ribs to the preheated oven and bake for about 1 hours, or until the meat is tender and starts to pull away from the bones. Baste the ribs with the reserved marinade every 30 minutes during the baking process.

  5. Finish the Ribs:

    • After baking, increase the oven temperature to 450°F and continue to cook the ribs for an additional 10-15 minutes, or until they develop a glossy, caramelized crust. Keep a close eye on them to prevent burning.

  6. Serve:

    • Remove the ribs from the oven and let them rest for a few minutes. Brush ribs with plum sauce before serving.

    • Serve the Chinese Barbecue Pork Spareribs hot, garnished with sliced scallions or sesame seeds if desired.
